Sous Chef

Qualification Standard

Essential:

  • Qualifications: School Certificate, NC3 Food Production
  • Proven experience in a Sous Chef role with good references
  • Personal Qualities: Organisational Skills, Humble but firm

Desirable:

  • Diploma in Hospitality and tourism management
  • Additional Skill required: Knowledge of Hotel Operations, HACCP standards

Duties:

• To assist the Executive Chef in designing menus (incl. special menus) and standardizing recipes for all food service locations considering customer base, popularity of various dishes, costs, and a variety of other factors.
• Cooks and/or directly supervises the cooking of items that require skillful preparation.
• To ensure that all stocks are ordered to the correct quantities, quality and price.
• Carry out regular spot checks with regards to stock, portion control, standard of presentation, taste of foods among others and minimise waste.
• Ensure grooming (appearance, personal hygiene and uniforms) of team members according to hotel standards, and also team members attitude towards both internal (colleagues) and external guests.
• To ensure that all equipment / tools/ instruments used under this department (incl. Safety equipment) are in good working conditions at all times, see to it that any minor repairs that need to be done calmly, professionally and in a proactive manner.
• Going extra mile in attending to any VIP’s, guests’ / visitors’ query and dissatisfaction/s within the jurisdiction of the Kitchen Department do the necessary follow-up. These should be done calmly, professionally and in a proactive manner.
• To assist his / her superiors in hiring and training of team members, in collaboration with the HR Department.
• Work closely with Management and team members, stimulating motivation and a sense of group satisfaction, so as to facilitate employee retention.
• Ensure that operating costs are kept to a minimum.
• To design and prepare any reports as requested by your superiors and assist the latter in any other administrative work.
• To be familiar with the hotel’s emergency plans; in case of fire, bomb threat and so on; and procedures for “Lost & Found” items.
• To be fully aware of any promotions, special events and packages organised by the hotel as per Daily Event Sheets, and pass on these information to Kitchen team member.
• Having an eye for details to improve the quality of service and means of control, by continuously being creative and taking initiative.
• To comply with safety regulations and procedures, and ensure that all team members of the Kitchen Department observe safety precautions and use safety equipment.
• Acting as a salesperson to any of the hotel’s paying and non-paying services and facilities.
